- Assessment of food and cooking skills: validation of a Portuguese version of a tool and characterisation of food and cooking skills in young adultsPublication . Costa, Vânia; Borrego, Rute; Mateus, Cátia; Carolino, Elisabete; Viegas, CláudiaABSTRACT - Introduction: Food and cooking skills (FCSks) is defined as a complex, interrelated, and person-centered set of skills, necessary to provide and prepare safe, nutritious, and culturally acceptable meals for all members of the household. Recent studies have associated higher FCSk with healthier eating habits and better health. This study aimed to validate a Portuguese version of a tool to assess and describe FCSk in young adults. Methods: A cross-sectional study used an online anonymous questionnaire that was disseminated to students from three Portuguese Higher Education Institutes. The questionnaire validation included Cronbach alpha and confirmatory factor analysis (CFA). The Mann-Whitney test was used for evaluating sample differences and Pearson correlation for association among variables. Results: Internal consistency reliability was 0.89 for cooking skills (CSks) and 0.87 for food skills (FSks). A moderate positive correlation was found between CSks and FSks confidence (r = 0.658, p < 0.01). CFA presented a good adjustment model for most of the fit indices, indicating the adequacy of the questionnaire. The CSks score was 74.1 ± 21.2 (moderate) and the food Skills was 94.2 ± 20.8 (high). Cook pulses, steaming food, and planning meals ahead scored the lowest value while boiling or simmering food, chopping, peeling vegetables, and reading the best-before date scored the highest value. No difference was found among sex (pCSk = 0.576; pFSk = 0.158), age (pCSk = 0.566; pFSk = 0.130), body mass index classes (pCSk = 0.903; pFSk = 0.320), or course (pCSk = 0.169; pFSk = 0.126). The greatest interest in gastronomy and frequency of meal preparation is associated with higher FCSk (p < 0.05). Conclusion: This research validated a Portuguese version of a tool to assess FCSk among young adults. Internal consistency reliability was adequate. Confirmatory factor analysis returned good psychometric properties for the questionnaire. Authors identified lower FCSk competencies in cooking pulses and vegetables, which are healthy and sustainable foods. This may compromise the adoption of healthy eating behaviors, so promoting FCSk in young adults may pose a strategy for nutrition and public health in reducing diet-related diseases. This tool may be used to identify opportunities for intervention in public health nutrition.

Strategical axis: food and nutrition literacy; food availability/environment; and food waste.

Evaluating and improving food quality and availability in school facilities can be a good strategy to promote healthier eating habits among the school community. Objectives: To audit product availability in vending machines from an academic Lisbon institute and its costs, and to compare the adequacy of these products with government legislation.

Na transição para a vida adulta os estilos de vida são influenciados por vários fatores que condicionam a tomada de decisões (ex. afastamento das famílias, mudanças nas rotinas, etc), que potenciam desequilíbrios no consumo alimentar. Neste contexto, o ambiente de ensino superior pode ser promotor da adoção de hábitos alimentares saudáveis, pela mudança da disponibilidade alimentar e do aumento da literacia. Pretende-se caracterizar: hábitos alimentares, insegurança alimentar, disponibilidade e acessibilidade alimentar, satisfação relativamente à atual oferta alimentar, competências alimentares e culinárias, práticas de sustentabilidade alimentar, desperdício alimentar nos refeitórios das UO do IPL.
- Mindful muscles: an innovative education project to tackle doping use in recreational sport and fitnessPublication . Tavares, Ana Sofia; Teixeira, Nuno; Borrego, Rute; Lazuras, Lambros; Ypsilanti, Antonia; Hawkins, Oliver; Examilioti, Petra; Barkoukis, Vassilis; Skoufa, LidaBackground: Athletes in recreational sports do not receive the same attention and have far more limited access to learning resources when it comes to anti-doping education, as compared to athletes in elite, competitive, organized sports. Furthermore, the existing anti-doping education resources for recreational sports athletes are informed by relevant practices in elite/competitive sports and largely focus on a deficit-based educational model that is concerned with fixing athletes' weaknesses or lack of skills. Objectives: Project Mindful Muscles aims to provide recreational sports athletes and related professionals with a novel, strengths-based approach, based on educational resources that are informed by evidence-based interventions on mindfulness, self-compassion, acceptance, and values (MASC), which will enable athletes in recreational sport to effectively cope with situations and pressures that may increase their personal risk for doping. Methods: Systematic literature review and report on best practices of self-administered MASC applications in substance use and body image impairments, to developed MASC resources, followed by a formative evaluation of the Mindful Muscles workbook with 350 exercisers 18-25 years old across seven European countries. Results: The findings supported the development of a framework for developing MASC resources for the primary and secondary prevention of PEDs (4 modules including different types of MASC exercises). The findings also informed the content and approach of the Mindful Muscles intervention and the implications of using strengths-based and positive approaches to doping prevention. Conclusions: The project Mindful Muscles is the first multifaceted, international psycho-educational intervention to tackle doping use among amateur athletes and exercisers, whose resources have the potential to inspire users to improve their lives not just in the sports arena, but also in other important life domains.
- Is motor competence a key factor in children’s body composition, independent of the method used for measuring it?Publication . Pombo, André; Rodrigues, Luis Paulo; Moreira, Ana Catarina; Borrego, Rute; Machado, Margarida; Costa, Vânia; Almeida, Ana; Tavares, Ana Sofia; Sá, Cristina; Luz, CarlosThe increase in sedentary behaviors and a decrease in children's physical activity (PA) observed in the last decades led to an increase in the prevalence of overweight and obesity in children worldwide. Most of the investigation in this field focus on components of physical fitness (PF) (cardiovascular fitness and upper body strength), however Motor Competence (MC) has been associated with childhood obesity in several studies. An adequate level of MC is a prerequisite for PF and its development can impact lifelong PA habits therefore it’s important to understand how these variables behave in different measures of body composition (BC). The aim of this study is to understand if the association of MC and childhood obesity is similar in different measures of BC (Body mass index (BMI), Skinfold, and Fat mass in kg) and to determine the role of the different motor skills components (MC, cardiovascular fitness and upper body strength) in this relationship. 181 children with a mean age of 7,93 years (SD = 1.28) were evaluated in MC (MCA instrument), cardiovascular fitness (PACER test), upper body strength (handgrip), BMI, skinfold thickness (Slaughter equation) and fat mass weight (value obtained in the slaughter equation converted in kg). Pearson correlations were used to understand the associations between MC and the BC variables, also separate multiple standard regressions were performed to explore the effect of motor skills components in the different measures of BC. MC, cardiovascular fitness, and upper body strength were used as independent variables (predictors), and BMI, skinfold thickness, and fat mass weight dependent variables. Overall, the results showed that MC is weak to moderately associated with childhood obesity independently of the measure used for BC (range between -.285 and -.316, p < .01). Furthermore, only upper body strength and MC were significant predictors (p < .001), discarding cardiovascular fitness, independently of the method used for BC. Our results indicate that MC seems to have similar behavior, in different methods that evaluate BC.
- Relação entre a adesão ao padrão alimentar mediterrânico e as competências alimentares e culinárias em estudantes universitários dos 18 aos 25 anosPublication . Costa, Vânia; Borrego, Rute; Viegas, CláudiaO Padrão Alimentar Mediterrânico (PAM) inclui diferentes dimensões: competências, conhecimentos, rituais e tradições relativas à agricultura, colheita, pesca, pecuária, conservação e confeção; envolvimento da atividade física e práticas sociais, em particular, a refeição em família, aproximando gerações, partilhando conhecimentos, receitas e competências culinárias. Dados nacionais revelam que crianças e adolescentes apresentam menor adesão ao Padrão Alimentar Mediterrânico. A importância das Competências Alimentares e Culinárias (CAC), nos hábitos alimentares saudáveis, tem demonstrado influenciar positivamente a alimentação e a qualidade de vida, pelo que o desenvolvimento e adaptação de intervenções em CAC para grupos da população, especialmente adultos jovens, pode facilitar as escolhas alimentares no futuro. Objetivo do estudo: Caracterizar o índice de adesão ao PAM de estudantes universitários portugueses e a sua relação com as CAC.
- Embracing the nutritional assessment in cerebral palsy: a toolkit for healthcare professionals for daily practicePublication . There are high omission rates in national surveillance reports of weight and height information. Alternative methods are used to assess nutritional status that may be unknown to the healthcare professionals (HCP) who report these children. Caregivers experience challenges when dealing with feeding problems (FP) common in CP. Our aim was to assess the difficulties in NSA which are causing this underreport and to create solutions for registers and caregivers. Methods: An online questionnaire was created for registers. Three meetings with HCP and caregivers were held to discuss problems and solutions regarding NSA and intervention. Results: HCP mentioned difficulty in NSA due to a lack of time, collaboration with others, equipment, and childrens’ motor impairment. Caregivers experienced difficulty in preparing nutritious meals with adapted textures. The creation of educational tools and other strategies were suggested. A toolkit for HCP was created with the weight and height assessment methods described and other for caregivers to deal with common FP. Conclusions: There are several difficulties experienced by HCP that might be overcome with educational tools, such as a toolkit. This will facilitate nutritional assessment and intervention and hopefully reduce underreporting.
- Food skills among the academic community of a Lisbon institute and their relation with Mediterranean diet adherencePublication . The Mediterranean Diet (MD) is one of the healthiest diets in the world and it is defined by the high intake of plant-based foods and the habits it promotes. Among these, are cooking skills (CSk), a component of FCSk. Only 26% of the Portuguese (PT) population have a high MD adherence (MDA). This study aims to evaluate the level of FCSk among the academic community and to determine the existence of a correlation between FCSk level and MD adherence.

A missão do PASS-IPL é promover iniciativas que proporcionem e incentivem a alimentação saudável e sustentável, nomeadamente no âmbito da dieta mediterrânica, da disponibilidade e acessibilidade alimentar nas cantinas, bares e máquinas de vending, da literacia alimentar e nutricional e do desperdício alimentar.
