Abstract(s)
O propósito deste trabalho é a pesquisa com vista à elaboração de um projecto em
âmbito de estágio em condições reais de um matadouro de bovinos, suínos e
ovinos/caprinos.
O presente trabalho integra uma unidade industrial localizada em Ur, perto dos
Pirinéus (França) com uma capacidade de abate de 80 bovinos e 500 suínos e 600
ovinos, nas cerca de 5 horas de trabalho diárias. Toda a carne consumível advém
desta indústria, e um dos factores a considerar neste ponto são as condições higiosanitárias,
que visam melhorar a qualidade do produto a distribuir pela população e
também os factores influentes na conservação de alimentos.
Um correcto funcionamento da instalação advém do correcto dimensionamento de
todas as instalações do Matadouro. Para tal, o desenvolvimento, pesquisa de
materiais e equipamentos adequados a cada instalação a serem utilizados nos
diferentes espaços frigoríficos desta unidade, foram essenciais para que a instalação
labore com qualidade e sem perdas de energia desnecessárias.
A metodologia seguida neste trabalho é apresentada com o fim de se elaborar um
projecto real de toda a unidade industrial.
The purpose of this work is the research and development of a project on a internship under real conditions in a bovines, pigs and sheep slaughterhouse. This study integrates an industrial sized unit in Ur, near the Pyrenees (France) with a capacity of 80 bovines and 500 pigs and 600 sheeps with capacity of 5 hours daily work. All consumable meat comes from this industry, and one of factors to consider at this point are the hygiene and sanitary conditions, to improve the quality of the product to be distributed by the population, and also the influential factors in food preservation. Proper functioning of the facility comes from the correct sizing of all the facilities of the Slaughterhouse. For this development, materials research, and appropriate equipment to each installation to be used in different refrigerated spaces of this unit, was essential for the installation to work with quality and without unnecessary loss of energy. The methodology followed in this work is presented in order to develop a real project for the industrial unit.
