Para a obtenção do grau de mestre, este trabalho foi desenvolvido no âmbito do Trabalho Final de Mestrado do Curso de Engenharia da Qualidade e Ambiente do Instituto Superior de Engenharia de Lisboa. A temática do presente trabalho relaciona-se com a filosofia Lean. A filosofia Lean fundamenta-se na redução ou eliminação dos desperdícios com base na aplicação de novas técnicas, ferramentas, metodologias e princípios agregados a essa filosofia. A filosofia Lean nasceu após a Segunda Guerra Mundial em ambiente fabril no setor automóvel, mas hoje em dia tem utilização em diversos setores nos quais se reconheceram resultados positivos. Este trabalho visa identificar, de maneira sistemática, as oportunidades de aplicação da filosofia Lean no processo vitivinícola da Fundação Assistência, Desenvolvimento e Formação Profissional, é uma Instituição de Solidariedade Social, sem fins lucrativos, o objetivo passa por explicar os pontos positivos com a aplicação da filosofia Lean, em particular a eliminação ou redução do desperdício e o aumento da produtividade.
Abstract To obtain a master’s degree, this work was developed within the scope of the master’s Final Work of the Quality and Environmental Engineering Course at the Instituto Superior de Engenharia de Lisboa. The theme of this work is related to the Lean philosophy. The Lean philosophy is based on the reduction or elimination of waste based on the application of new techniques, tools, methodologies, and principles added to this philosophy. The Lean philosophy was born after World War II in a manufacturing environment in the automotive sector but nowadays it is used in several sectors where positive results have been recognized. This work aims to identify, in a systematic way, the opportunities to apply the Lean philosophy in the winemaking process of the Foundation Assistance, Development and Professional Training, it is a non-profit Social Solidarity Institution, the objective is to explain the positive points with the application of the Lean philosophy, in particular the elimination or reduction of waste and the increase in productivity.
