- Development of a tool to assess the compliance of cafeteria menus with the Mediterranean DietPublication . Silva, S. S.; Rocha, A.; Ferreira, L.; Neto, Beatriz; Dikmen, D.; Filipec, S. Vidacek; Satalic, Z.; Viegas, CláudiaBackground: The Mediterranean diet (MD) has been considered one of the healthiest dietary patterns, and an excellent model of sustainability. Higher Education food services present an excellent scenario to encourage students healthy eating habits and modulate food choices. The purpose of this work was to develop an index to evaluate MD compliance with cafeteria menus. Methods: Three major axes were considered: MD key points, existing indexes on individual adherence to the MD, and existing indexes on menu assessment. The index includes four levels: (I) assesses the availability (IA), variety, and frequency (IB) of food; (II) evaluates the menu's nutritional quality; (III) assesses the menu's quality through information provided in the dishes' technical specifications and (IV) allows a more detailed evaluation through on-site visits and documentation consultation. The components receive a score between - 2 and 3, according to the given answers. The final score may vary between - 33.5 and 41.5 points depending on the degree of compliance with the MD key points. The index was applied to 60 menus from different contexts using complete assessments of each menu, performed independently by 3 researchers, using the same pre-prepared Microsoft Excel® spreadsheet. Inter-rater reliability was assessed using Cohen's Kappa and internal consistency with Cronbach's alpha. Results: Assessment for level I) returned a Cohen's Kappa coefficient of 0.92 (p < 0.05) and a Cronbach's alpha coefficient of 0.88. Dimension I is mostly influenced by subdimension IB (r = 0,97). The availability of non-starchy vegetables and fresh fruits has a stronger correlation with IA (availability of foods), and the higher availability of fish, pulses, and fruit has a strong positive correlation with IB (variety and frequency of foods). Conclusion: Researchers believe that the index is a useful tool to assess compliance of menus to the MD and help identify the key points that need to be addressed and improved in cafeterias.
- Dynamics of liquid bridges between patterned surfacesPublication . Rodrigues, Margarida S.; Coelho, Rodrigo; Teixeira, PauloWe have simulated the motion of a single vertical, two-dimensional liquid bridge spanning the gap between two flat, horizontal solid substrates consisting of alternating hydrophilic and hydrophobic stripes, using a multicomponent pseudopotential lattice Boltzmann method. This extends our earlier work where the substrates were uniformly hydrophilic or hydrophobic. In steady-state conditions, we calculate the following, as functions of pattern wavelength: (i) the velocity fields of moving bridges, in particular their (time-averaged) terminal velocities; (ii) the deformation of moving bridges, as measured by the deviation of bridge contact angles from their equilibrium values; (iii) the minimum applied force that breaks a moving bridge. In addition, we found that a bridge moving between patterned substrates cannot be mapped onto a bridge moving between uniform substrates endowed with some effective contact angle, even in the limit of very small pattern wavelength compared to bridge width.
- A theoretical exploration departing from the performance Delayed Movements for an Obstinate JoyPublication .

- Nurses under pressure: the demands of professional performance and their management through the use of medicationPublication . Raposo, Hélder António; Egreja, Catarina; Lopes, NoémiaThis article discusses the relationship between the demands on nurses’ professional performance and adherence to the use of medicines and supplements for their management. This approach allows us to analyze the transformations of nursing work and how nurses use various natural and pharmaceutical resources to cope with the pressures they face in their professional activities. To understand the interconnection between the transformations in nursing work and what we refer to here as the process of pharmaceuticalisation of work contexts, we use the results of a sociological mixed methods study on the use of medicines and food supplements for managing professional performance. The results show some of the main pressure factors in nursing work and how the increase in professional pressure substantially affects performance-related medicine use, as these become more frequent when nurses perceive their work as more intense, demanding, and exposed to risks.
- Combined TLR2/TLR4 activation equip non-mucosal dendritic cells to prime Th1 cells with gut tropismPublication . Zúquete, Sara; Ferreira, Mariana; Delgado, Inês L. S.; Gazalle, Paula; Andaluz, Stephanie; Rosa, Maria Teresa; Mendes, Ana Catarina; Santos, Dulce; Nolasco, Sofia; Graça, Luís; Leitão, Alexandre; Basto, Afonso P.Activated CD4+ T cells located at mucosal surfaces orchestrate local effector immune mechanisms. When properly polarized, these cells contribute to block infections at early stages and may be essential to restrain the local growth of mucosal tumors, playing a critical role in host protection. How CD4+ T cells simultaneously integrate gut-homing instructions and Th polarization signals transmitted by TLR-activated dendritic cells (DCs) is unknown. Here, we show that the combined activation through TLR2, which alone does not induce a clear Th polarization, and TLR4, which alone does not imprint mucosal tropism, equip non-mucosal DCs to prime gut-homing CD4+ T cells with reinforced Th1 polarization. These results show that targeting DCs with combined innate stimuli with distinct properties is a rational strategy to program the outcome of T cell polarization and simultaneously control their tissue tropism. Exploring this strategy could enhance the efficacy of vaccines and immune cell therapies.
- Comprehensive analysis of particulate matter, gaseous pollutants, and microbiological contamination in an international chain supermarketPublication . Furst, Leonardo; Cipoli, Yago; Galindo, Nuria; Yubero, Eduardo; Viegas, Carla; Pena, Pedro; Nunes, Teresa; Feliciano, Manuel; Alves, CéliaIndoor environmental quality is of utmost importance since urban populations spend much of their life in confined spaces. Supermarkets offer a wide range of products and services that are prone to emitting several air pollutants. This study aimed to comprehensively characterize indoor and outdoor air quality in a multinational supermarket, encompassing not only criteria parameters but also unregulated pollutants of concern. Monitoring included measurements of comfort parameters, CO2, multiple gaseous pollutants, particulate matter (PM10), and bioburden. PM10, volatile organic compounds (VOCs), and carbonyls were subject to chemical speciation. Globally, the supermarket presented CO2, VOCs, and PM10 values below the limits imposed by international regulations. The PM10 concentration in the supermarket was 33.5±23.2 μg/m3, and the indoor-to-outdoor PM10 ratio was 1.76. Carbonaceous constituents represented PM10 mass fractions of 21.6% indoors and 15.3% outdoors. Due to the use of stainless-steel utensils, flour, and fermentation processes, the bakery proved to be a pollution hotspot, presenting the highest concentrations of PM10 (73.1±9.16 μg/m3), PM10-bound elements (S, Cl, K, Ca, Ti, and Cr) and acetaldehyde (42.7 μg/m3). The maximum tetrachloroethylene level (130 μg/m3) was obtained in the cleaning products section. The highest values of colony-forming units of bacteria and fungi were recorded in the bakery, and fruit and vegetable section. Penicillium sp. was the most prevalent fungal species, corresponding to 56.9% of the total colonies. In addition, other fungal species/sections with toxicological or pathogenic potential were detected (Aspergillus sections Aspergilli, Circumdati, Flavi, Mucor, and Fusarium sp.).
