Abstract(s)
Este Trabalho Final de Mestrado consiste na concepção de uma instalação frigorífica com atmosfera controlada com o objectivo de armazenar uvas de mesa.
Em primeiro lugar estudou-se os factores que influenciam na concepção da instalação, quer a nível interno e externo. Também foi feito um estudo do produto, como o seu processo de amadurecimento, a sua respiração, e produção de etileno, factores fundamentais em atmosfera controlada.
De seguida foi dimensionada a instalação, com atenção ao seu revestimento térmico e foram desenhados os esquemas de princípio simples.
Foi feito o balanço térmico da instalação, assim como todos os cálculos que permitiram a selecção dos equipamentos das câmaras, do tanque de pré-arrefecimento, e da atmosfera controlada.
Por fim fez-se uma análise dos custos que uma atmosfera controlada tem, assim como o seu benefício em prolongar o estado são de produto, comparado ao que este duraria em atmosfera controlada.
Abstract: This final master’s degree project consists on the design of a refrigeration facility on a controlled atmosphere, for storage of grapes for consumption. First, it was studied the main factors that influence in the same design, internally or externally. It was studied the product as well, such as its maturation, breathing process, and ethylene production, crucial factors to the controlled atmosphere. It was then dimensioned the facility, with special caution to its coating, and was drawn plain layout schemes. Also, it was made the thermal balance of the facility, as well as all calculations to allow choosing all equipment related to the refrigeration chamber, the pre-cooling tank and the controlled atmosphere. Finally, it was made an analysis on the costs of the controlled atmosphere, as well as its benefit of extend the consumption durability of the product, compared to what it would last in a normal atmosphere.
